White pepper, also known as white peppercorns, is the same berry as common black peppercorn, simply a ripe black peppercorn with its dark outer shell removed. It is a spice that adds subtle piquancy without the abrasive bite of black pepper.

Whole peppercorns retain their flavour for much longer, so recipes often advise using freshly ground pepper.
